The production process includes breaking and separating fresh eggs, filtration, pasteurization, and spray drying, ensuring a clean and safe product. The powder is highly soluble (minimum 85%) and contains 58-63% fat and 30-37% protein. It enhances the texture, color, and crispness of baked goods and other food applications.
