Description
Potato protein is a fine, loose powder of gray, light gray or yellowish green color and with a typical smell of dried potatoes. Potato protein is obtained by cleaning, steaming and peeling potatoes. The starch is then extracted with water, resulting in a suspension, which is treated with acid, then dried and processed into a powder.
Potato protein is a rich source of plant protein and contains essential amino acids. It also has functional properties – it can be used as a thickener and also has water-binding properties.
