Cocoa Powder Classification
It is classified into high-fat, medium-fat and low-fat according to its cocoa butter content. High-fat cocoa butter content of 20.0%-24.0%, medium-fat cocoa butter content of 10.0%-12.0%, low-fat cocoa butter content of 8%.
It is divided into natural cocoa powder and alkalised cocoa powder according to the alkalisation process. Natural cocoa powder is the cocoa beans in the process of processing into cocoa powder without adding any additives to produce a light brown powder; and alkalised cocoa powder is in the cocoa bean processing process added edible alkali, so as to achieve the purpose of regulating the ph value, at the same time, the colour of the cocoa powder is also deepened, and the aroma is much thicker than the natural cocoa powder.
Natural cocoa powder is not used in the production of liquid products, because the solubility is about 30%; alkalised cocoa powder can be used in the production of any food products, and can also be taken directly.The pH value of natural cocoa powder is generally between 5.0-5.8; the pH value of alkalised cocoa powder is generally between 6.2-7.5.
