Description
Modified Starch (Acetylated Distarch Adipate, E 1422) is a powder with a white, off-white or yellowish color. It has a neutral taste and smell. It is a product of plant origin, usually produced from waxy corn, but can also be obtained from potatoes, tapioca or rice, among others. E1422 is produced by treating starch with acetic acid anhydride and adipic acid anhydride.
Because it is a modified starch, E1422 is primarily resistant to retrogradation, i.e. gelatinization. It is also more viscous than native starch and resistant to acidic and alkaline environments. It is also characterized by its stability to freezing and thawing and withstanding storage at low temperatures.
There are cold-, warm- and hot-swelling modified starches:
- Cold-swelling has its thickening properties in cold water and is used when using cold technology. It is fully soluble in cold water.
- Heat swellable has best properties at warm temperatures and is used in warm applications.
- Hot swellable is used in high temperature production. It is used in hot applications.

The shelf life of modified starch stored in unopened packaging is up to 24 months. Acetylated distarch adipate should be protected from strong fluctuations in temperature and humidity. The optimal conditions for storing the product are dry, ventilated storage rooms, free from moisture and animal parasites. Temperature from 5 to 28°C, maximum humidity 70%. The product should be used as soon as possible after opening to avoid reabsorption of moisture.

E1422 Modified Starch, which swells when heated, is used to increase viscosity and stabilize the consistency in sauces, ketchups, mayonnaises, fruit fillings or glazes produced at warmer temperatures. It also creates a creamy and stable consistency in products such as cheeses and cheese-like products. E1422 Starch, which swells when heated, is also an ingredient in instant mixes, preserves or frozen dishes.
Modified Starch E1422 hot swelling is used in production at hot temperatures, e.g. in meat products, to improve their appearance, reduce drying in the product cross-section and reduce the amount of other moisture-binding substances. It can also be used to maintain juiciness and elastic structure after the freezing and thawing process of food products.
