Description

Xanthan gum is a free-flowing white powder with no foreign odors. It is obtained from plants such as corn or cane sugar by fermentation using the bacterium Xanthomonas campestris.

Xanthan gum offers a wide range of properties that change consistency – it acts as a thickener, texturizer, and stabilizer. It has the ability to absorb moisture from the air, i.e. it is hygroscopic. It dissolves well at both high and low temperatures, as well as in other types of liquids.
