Description

Xylitol (E967) is a white crystalline powder, practically odorless. It is very soluble in water and poorly soluble in ethanol. Birch sugar has a low glycemic index and is less caloric than sugar, which is why it can be used in the production of food products intended for diabetics and low-calorie. Although it has a sweet taste, it has anti-caries properties. After consumption, it causes a cooling effect in the mouth, which is used in the production of chewing gums, mouthwashes and mints. If xylitol is added to jellies or jams, it reduces the gelling power of gelling agents. It is also resistant to high temperatures, does not lose its properties during heat treatment, does not caramelize.
